Named for the Greek word pélagos, meaning “the open sea,” Pelago captures the ambiance of endless horizons, gentle breezes, and the world-renowned beauty that surrounds the resort.
Set high above the shoreline, Pelago offers sweeping panoramic views and a menu that artfully blends Mediterranean flavors with subtle Asian influences, all delivered with polished service and relaxed sophistication.
Open from early till late, the space transforms effortlessly from sunlit mornings and dazzling afternoons, through the Sunset Happy Hour and into elegant evenings beneath the stars.
Culinary Highlights at Pelago
Start your day at Pelago with perfectly cooked classic Eggs Benedict, or the luxurious Eggs Royal featuring cured salmon gravlax, brown butter hollandaise sauce, spinach and lemon zest. Make your breakfast a celebration by adding a Mimosa Flight of three Prosecco flutes flavoured with traditional orange, tropical pineapple and exotic blood orange juices.
Lunch dishes are light but sustaining, highlighting local flavours like a ceviche of Hamachi and Conch or a Butter Poached Caicos Lobster Roll. Made-from-scratch pizzas bring authentic Mediterranean flavors, while Asian influences come into play with choices like Tuna Tataki with sticky rice, exotic chutney, wasabi, and soy sauce, and the 24 Hour Sous Vide Pork Belly.
As night falls, alternating prix fixe menus offer upscale flavours like Hot-Smoked Peking Duck Breast, Pan-seared Red Snapper, and Grassfed US Prime Ribeye from Sunday through Wednesday, while Thursday through Saturday offerings include Pelago-style Caicos Lobster Cocktail, Slow-roasted Sea Bream Filet, and Roasted Beef Tenderloin.

Created by our appropriately-named and truly passionate mixologist, Whiskey, Pelago’s drinks menu focuses on fresh, balanced flavors, with an emphasis on quality spirits and seasonal ingredients. Cocktails are thoughtfully crafted rather than showy, intended to complement the food and the setting—whether that’s a refreshing vodka-based Cucumber Spritz in the late afternoon, or something deeper and more complex as the evening settles in.
International wines are available by the glass, while local and international beers are iced to perfection. The result is a relaxed, well-edited drinks list that is perfectly suited to turquoise days, long sunsets and unhurried nights above Grace Bay.
